Provenance & craft

Slow mornings, stone hearths & good grain.

Little Quince began with a simple devotion to traditional milling and patient wild yeast. Set in an old wool merchant’s storehouse on Tanner’s Row, the bakery opens each morning to the smell of roasted barley, cultured butter and fresh coffee.

We think a town bakery should be an unhurried anchor: flour from small mills in the Wend Valley, dough resting through thirty-six hours of quiet fermentation, and long conversations across worn timber tables.

“We only work with stoneground grain that keeps its wheatgerm. That is what gives each crumb its golden colour and nutty depth.”

— Martha Finch, founder & head baker

    — Tom, visiting from Kelsow
  • “Unpretentious, properly committed to the craft, and the best sourdough we’ve broken this year.”
